"Broiled Cod with Paprika" from Restaurant Verdant, Ashland, OR

1 1/2 Lb. cod fillets (1 1/2 to 2)
2 Tsp. paprika
1/2 C. butter
1 onion finely chopped
1/4 Tsp. cayenne
1/2 Tsp. salt
1 Tbsp. lemon juice
1 Tbsp. chopped parsley
In pan, melt 2 tablespoons of the butter and saute onion until soft. Add the paprika and cayenne and cook gently for 2 minutes longer. Add salt, lemon juice and remaining butter and heat until melted. Set fish on a broiler rack and brush with the paprika mixture. Broil about 2 inches from heat for 4 to 5 minutes, brushing with more of the paprika mixture. Turn; brush with remaining butter and broil 4 to 5 minutes longer. Fish should be browned and flake easily.

A True Gem in Ashland
DESCRIPTION: We never miss a meal at Chateaulin when we're in Ashland, which is several times a year. We enjoy the fixed price menu for $32/pp including two small glasses of wine that is perfectly paired with the entrees. Don't miss this one! There is also a very nice wine shop next door and the sommelier here is extremely knowledgeable about wines from all over the world. Cheers!

A wine menu chosen by the Sommelier to match dinner will be available nightly. Set in the Carriage House at the Inn at Lithia Springs, located at 2165 W. Jackson where Ashland s Main Street becomes South Pacific Highway, the restaurant seats 40 people. The new restaurant is open for dinner Thursdays through Saturdays from 5:30 p.m. until 8 p.m. \n \nReservations are available by calling (541) 488-1062. \n\nIn addition to Thursday-through-Saturday dinners, Verdant is hosting "Wine Wednesdays," every Wednesday from 4:00 \np.m. until 9:00 p.m. These events feature special presentations of Owner- or Barrel-Select wines, paired with the restaurant s gourmet fare in an informal setting where guests can eat, talk and sample fine food and wine in comfort. \n\nHelena Darling, Verdant s executive chef, founded Ashland s Prima Vera restaurant in the early 90 s, then sold it in 1997. \n \n"I am delighted to be working with Duane Smith to provide our region and visiting tourists with a new and different fine-dining experience," said Darling.\n\n"I m going to ensure that Verdant will be known for its fresh, local ingredients; sophisticated, textured flavors and creative menu options featuring regional favorites. Our cooking is really inspired by what we ve got growing outside the kitchen door and the wide variety of very high quality locally-grown organic produce and meat." Darling s style incorporates the use of fresh and rare herbs, like Saffron; flavored oils, like truffle and walnut oils; and aged, balsamic vinegars in the preparation of roasted, grilled and baked meat and fish entrees. Her desserts add Northwest touches to her classic European sensibilities to \nproduce menu items like: "Meyer Lemon Custard Cake with Blackberry Puree and Orange Cream Cookie" and "Housemade \nSpumoni Bombe with Strawberry, Pistachio and Chocolate Ice Creams served with Balsamic Syrup and Anise Biscotti."\n\nAfter years of promoting and enjoying all of Ashland s fine-dining establishments, owner Duane Smith thought it was time to offer area residents and Inn guests his own vision of Rogue Valley Haut Cuisine. "I ve always wanted to try my hand at the restaurant business," said Smith, who has lived in Ashland for almost 40 years. "I remember when the Chateaulin first opened 34 years ago. Overrated and Unappetizing
DESCRIPTION: My wife and I went to this restaurant during our September pilgrimage through southern Oregon and on up to Canada. It was very pretentious and our outdoor dining was unpleasant due to many flies all over the food and table. My wife recommended to the staff that they use citronella to control the flies and was told that such a strategy would unduly disturb the tasting of fine wine. Bleaghhh. Who can enjoy fine wine with flies all over their food? I wouldn't return to this place and the $$$ prices would buy a better and more relaxing experience elsewhere.
